Who uses Roku or Sling? Recommendations?

I've been using a Roku for 2.5yrs, and quite happy with it. Spring for the 4K version even if your TV isn't 4K, it'll be snappier, and you'll be good to go when you get a 4K TV...

If you do not have quality 4K devices (yes, all 4K TVs are not the same), roku is fine.
I tried few Live TV streaming services before going back to FIOS TV, I found YouTube TV had the best quality streaming, but the channel selection is very limited.
As far as external devices are concerned, nVidia Shield is the best IMO.
BTW, you are asking choose between Roku and Sling. Roku is a steaming device, Sling is a streaming service.

I have internet and TV with the same provider. I want to get rid of them altogether, but they have a monopoly in the area. I will probably have to keep them as internet.

I have never had (or even wanted) cable service and more recently have not caved into FIOS. But I get about 54 channels of ATSC 1080P digital TV plus FM radio and there is no monthly fee at all.
Internet or satellite down-link connection not required.
One antenna, RG-11 coax, a couple of low-noise amplifiers, a multi-room distributor, and RG-6 coax -- and have a one-time effort for a master antenna system (MATV).

That is you are in an area that gets decent reception. I live between Wheaton Park and the North West Branch Park in Montgomery Country. Due to the foliage and the fact we are down in a holler (if you are from West Virginia) means reception is lousy.
With regard to streaming devices has anyone tried the Fire TV Cube. I use my htpc running Ubuntu 18.04 and for streaming (Sling TV, Acorn TV, BritBox, Amazon Prime Videos, and MHz Choice) use Google Chrome.
