What's worse: an old DAC or a built in DAC in the average cheap DVD/CD player? Would that old DAC improve the player's sound?

You’d need to look at it on a case by case basis, but generally speaking a good old dac is probably better than a cheap new player...

It's that Pop Pulse that has the left channel issue when connected to optical. I hooked it to a old Sony DVD player and use it to listen to CDs.

There's no one answer for every possible combination of products. Try it both ways and see which sounds better. It's fun!

You could try just listening to music instead of monkeying around with junk equipment
