I don't see any reason why the circuit won't work. The two halves of the 1st 12AX7 will not have identical currents because the plate voltages will be different, but that is not a reason that it can't work. And yes, the grids are not tied together.
It was common to include mechanical choppers to greatly lower the dc offset issues that you have with tubes.
